Matcha Chocolate Quinoa Bites
Matcha Chocolate Quinoa Bites
Matcha, chocolate and quinoa. A no brainer. These bites are packed with a crunch, but more importantly filled with protein and healthy fats that will power you all morning and all day while on the go. Each batch makes 10-12 bites, so grab them as you head out the door to stay energized and take on the day.
INGREDIENTS
Makes 10-12 chocolate bites
- 85g Nekohama matcha chocolate
- 50-55g pre-washed and dried quinoa
METHOD
- To make puffed quinoa : heat a frying pan or a shallow saucepan over medium high heat. Pour quinoa and reduce the heat to medium low. Let it pop for several minutes tossing frequently so it doesn't burn.
- Transfer to a bowl and set aside.
- Chop matcha chocolate and place 2/3 of the chocolate into a heatproof bowl. Place the bowl over a double boiler and melt the chocolate stirring constantly.
- Take off the heat, add reserved 1/3 of the chocolate and mix until everything is melted.
- Add quinoa and mix.
- Using a tablespoon, scoop small portions of the mixture and place onto a parchment sheet forming a small disc. Put in a fridge for 30 mins- 1 hour to set.
- Store in an airtight container in the fridge.
